Citrus Vinaigrette

Citrus Vinaigrette
One way to ascend your greenlife is to keep a freshly made Citrus Vinaigrette readily available. Use it on a salad, or marinate some meats.

Ingredients

  • Finely chopped shallot
  • Olive oil
  • White wine or champagne vinegar
  • Fresh lemon juice
  • Fresh orange juice
  • Finely grated lemon zest
  • Kosher salt
  • Coarse pepper

  • Storage jar

Preparations

  • Finely chop shallot
  • Grate skin of a lemon for it zest
  • Juice an orange
  • Juice two lemons

Instructions

  • Combine finely chopped shallots, white wine vinegar, some kosher salt and coarse pepper, and the fresh lemon and orange juice into the storage jar. Let sit for a couple of minutes so that the citrus juice can do some work on the shallots and salt.
  • Add the finely grated lemon zest and olive oil to the jar, cover, and shake well. Season to taste with salt and pepper.
  • This should last about a week in the refrigerator. Best prepared at least a day in advance.
  • Shake well before use. It may need to warm to a bit before it can fully combine.
